The “Maestro Norcino” school
Founded in 1991, in the factory Azienda Agricola il Collaccio, it gives the participant four different degrees:
  • Porcello Onorario (settimana rosa)
  • Apprendista Porcello (1 anno di corso)
  • Gran Porcello (2 anno)
  • Grande Verro (3 anno).

The Grande Verro diploma equals a bachelors degree, it is achieved after three years and entitles you to a specific diploma.

Norcineria course and “Pink week” :
will be held from late afternoon of December 26th until the January 2nd.

Programme:
- The students will spend time in the Norcineria with Mario and Salvatore (our two norcini) learning to prepare salami, sausages and ham.
